I accidentally hit it and it dropped... can I somehow stick it back on its stem of put the bud on water or something?

No, sorry . But even if you put it in water, it might not open up. If it is a 'young' bud , it might not be mature enough to open. If it IS mature, maybe with a little warm water you can coaxe it to open, then leave it in the water.
